Tofu is a popular summer snack loved by all ages, not only in Vietnam but also in Asian countries. The origin of this name is unknown. Some people believe that it comes from "tofu", which means tofu in Chinese.

Tofu is made from ground soybeans, filtered to remove the residue like making tofu but more thoroughly, then boiled, cooled, and frozen. When eating tofu, add a little ice and you'll have a cool bowl of tofu, delicious, light on the stomach, suitable for cooling off in the summer sun.

In three regions, people call this soybean dish by different names. People in Hanoi call it tofu, people in Hai Phong call it tofu, people in the Central region call it tofu, but people in the South call it tofu... In Hanoi, tofu is eaten with sugar water mixed with jasmine flowers. , fragrant. Like other dishes, making tofu also has its own craft village. 

An Phu village (now in Nghia Do ward, Cau Giay district) is considered the birthplace of this dish in Hanoi. Currently, diners can find many tofu shops in this area. The seller uses a spoon or mussel shell to put thin spoonfuls of pho into a bowl so that it is smooth and consistent, then add sugar water and a few ice cubes. A bowl of standard tofu in Hanoi is not too sweet, has jasmine flavor, is light and comfortable to eat.

Central region tofu is added with a little crushed ginger, or sliced ​​and put on top of tofu. In the South, tofu is thicker and thicker, often adding coconut milk. Dishes made from tofu were also born from here, such as pearl tofu, caramel tofu, tofu served with jelly, lotus seeds...

In the past, tofu was often sold on the street with the familiar cry "Who... here is tofu!", echoing throughout the streets on summer afternoons, but this is gradually no longer common. Although many cool desserts have been imported, tofu, tofu, and tofu still maintain their own position as popular dishes loved by Vietnamese people of all ages. 

Today, in all three regions, the way to eat tofu has been changed to suit the increasingly diverse culinary tastes of diners. However, at any store, you can still enjoy the classic tofu dish, served with sugar water and ice cubes.
