When talking about rustic coffee, we are talking about pure coffee from roasting to grinding to packaging, so sometimes you will hear about pure rustic roasted coffee. 2. How is rustic coffee produced?

- Coffee beans that have reached their peak maturity are harvested by farmers and then carefully screened one more time to remove flat, wormy, damaged beans, etc. Only large, round beans that meet standards are taken before being put into the process. preliminary processing.

3. How to identify Moc coffee
Once you know what rustic coffee is, recognition is quite simple. Below are the characteristics to recognize rustic roasted coffee.

Appearance of rustic roasted coffee
With rustic roasted coffee beans, the outside has a natural light shine and looks a little rough on close inspection. When touched, it is completely smooth and does not squeak. Sometimes you will see a water-like glossy layer appearing unevenly on the seed body. You can't feel anything when you touch it. This is the natural essential oil secreted inside the seed. It is completely different from oil because coffee is mixed with butter when roasted. With ground roasted coffee powder, you can feel the dryness and roughness of the powder. When touched, there are absolutely no lumps and you can feel the dryness.

The taste of rustic roasted coffee
Rustic roasted coffee has a gentle taste that is not too harsh like marinated coffee. Especially in beans, normal rustic coffee beans have a faint smell, smelling close to the beans and clearly seeing the smell. And the marinated coffee beans are easy to smell, and the scent is very strong. To be able to feel the smell of rustic coffee, we can crush the beans or grind the beans, then the coffee flavor really spreads.
The scent of roasted coffee powder fades very quickly and gradually disappears within about 2-4 weeks of use (under frequent opening of the bag). Meanwhile, coffees mixed with flavorings have a smell that can last all year.

Try it with water
This is a method used by many people and in fact has shown quite high accuracy. Put 1 teaspoon of wood in 1 glass of water and monitor. Rustic coffee powder has a low density so it easily floats under the tension of the water surface and slowly sinks as the water gradually absorbs, creating the characteristic brown color of coffee.
Meanwhile, with coffee sets mixed with soy corn powder, when added to water, it will dissolve quickly and sink, part of the impurity powder mixed with the water creates a dark, black color.

Rustic coffee when brewing
Freshly roasted rustic coffee is easily recognized when hot water is poured into the filter, causing a lot of foaming, sometimes spilling out of the filter. This is because new coffee, the amount of gas that still exists in the coffee powder when exposed to water will accelerate the process of releasing gas to create foam.
Coffee grounds after extraction are still hard, making it difficult to clearly feel the solidity when squeezed. With coffee mixed with soy cornstarch, when hot water is added, there is swelling, little foam, and the coffee grounds become mushy when squeezed.
Water extracted from rustic coffee often has a characteristic cockroach brown color. The light brown color depends on the degree of roasting of the beans, but the brown color is clearly visible. Coffee with impurities and poor quality is often black, due to the flour and butter being burned when roasted with coffee.
Similar to machine-brewed rustic coffee, the coffee grounds after brewing with the machine do not get wet, and when squeezed by hand, they do not become mushy at all.
